Pietruszka

Pietruszka – Petroselinum hortense Hoffm. w dzikim stanie rośnie nad Morzem Śródziemnym, na skałach w sąsiedztwie źródeł. Uprawiana była już w starożytności jako roślina ozdobna, jadalna i lecznicza. Była to pietruszka naciowa. Pietruszka korzeniowa weszła do uprawy pod koniec XVI w.

Pietruszka korzeniowa jest rośliną dwuletnią. W pierwszym roku wegetacji wytwarza bujną rozetę składającą się z kilkudziesięciu liści i silny system korzeniowy, a w drugim roku rozgałęziony pęd z  kwiatostanami.

Korzenie pietruszki zawierają cukry, białko, witaminę C, prowitaminę A, a liście karoten, witaminy z grupy B, cukry, białko i duże ilości witaminy C. We wszystkich częściach pietruszki znajdują się olejki eteryczne, a wśród nich apiol.
